Are you a fan of Guacamole? In our family we could live on Avocados. No joke. I make a Chunky Guacamole that I could eat for breakfast, lunch or dinner. Or a snack at any time of day. Or night.
What’s not to love about a good Guacamole paired with some crunchy and slightly salty chips?
How bout a salad dish? Like a beautiful individual Avocado Salad for your next party or barbeque?
Now, you could prepare these two ways. The first would be to scoop out all the avocado yumminess and mush it all together and mix in the other ingredients, just like you would in the Chunky Guacamole recipe. Then, spoon the dip back into the avocado skin like you would for a twice baked potato.
Or. You knew that was coming. Or… you could simply cut the avocado in half, score the avocado meat by slicing it a few times down the length and a few times across, all the while being careful not to cut through the skin. Scoring the meat of the avocado is going to make it easy to scoop right out of there when its time eat.
Finally, sprinkle with salt and pepper and add tomatoes and onions. Just like that, you’ve got a perfect serving for one.
These Avocado Salads make a gorgeous presentation and are quite simple to make, even if you’ve never made guacamole before.
Makes 4 servings
- 2 avocados, cut in half
- 1/2 Roma tomato, chopped
- 1/4 cup onion, chopped
- Salt and pepper to taste
- Wash and half both avocados. Remove seed.
- Add salt and pepper to taste.
- Top with chopped tomato and onion.
- Serve with chips or salad.
