Every winter we wait for the thaw of spring. And ever since moving to Wisconsin, the thaw of spring includes the hopeful indulgence of colorful spring decor, vases of tulips and other pastel buds, and hopefully–the emergence of grass where there once was snow. Sometimes, when the snow lingers has it has decided to do today, I have to liven things up and push for spring in a more deliberate way–cooking up foods that remind me of warmer weather, like this delicious Blackened Salmon with Fruit Salsa.

Blackened Salmon with Fruit Salsa
- Cook Time: 20 minutes
- Total Time: 20 minutes
- Blackened pre-seasoned salmon fillets (frozen)
- Fruit Salsa
- 1 1/2 cups blueberries
- 1 cup strawberries, diced
- 2 mangoes, diced
- 1 cup diced red onion
- lime juice of 1 lime
- Simply toss the fillets in a baking dish and bake at 350 degrees for 20 minutes. Add mango salsa for a deliciously simple and healthy weekday meal.
- Rinse blueberries and strawberries. Combine all ingredients in a bowl and stir.
