It can be hard to always make healthy meals for your family when things get really busy. That’s why I love that this Chicken, Broccoli, and Rice Casserole is easy to make and can be made ahead for those busy nights.
Many casseroles contain canned or packaged ingredients. I prefer not to use canned food in general and I prefer to make things from scratch.
Don’t worry if you aren’t the best cook, this is still very easy to make and delicious. It also isn’t very time-consuming.
The best part is you can make it ahead and stick it in the fridge for later or even freeze it. I like to double the recipe and make one for dinner that night and have one in the freezer for a busy night.
How to Make Chicken, Broccoli, and Rice Casserole
Before you put everything together for Chicken, Broccoli, and Rice Casserole, you need cooked chicken, lightly steamed broccoli, and cooked rice.
This is great for leftovers, you can even switch the broccoli for different vegetables. A rotisserie chicken is great to use in this as well.
I hate doing dishes so I have found ways to make this using minimal dishes. I first cook the rice in my Instant Pot. If I don’t already have cooked chicken I cook it in the same Instant Pot after I remove the rice. This would be the perfect occasion to have a second Instant Pot inner pot. I also steam my broccoli in one pan and then remove the broccoli and make my sauce in that pan.
However you want to get your cooked ingredients is fine. Whatever is easiest for you is great, this recipe is really simple and versatile.
Once you have your chicken, broccoli, and rice it’s time to make your sauce. You can just use two cans of cream of chicken soup but this sauce is easy to make so give it a try at least once. It's the same sauce I use in my chicken pot pie so you can double it and save half for that another night.
To make the sauce all you need to do is melt butter over medium heat, add flour, and cook for about 1 minute. You then slowly add chicken broth while whisking and let simmer until thickened.
Then it’s time to mix everything together. If you are eating it right away simply mix it all in a 9x9 pan. If you want to freeze it you can put it in a freezer bag or a freezer safe meal prep container. To use just thaw overnight and follow the normal cooking instructions.

Chicken, Broccoli, and Rice Casserole
Ingredients
- 5 cups cooked rice
- 2 cups cooked chicken chopped
- 2 cups broccoli lightly steamed and chopped
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 2 cups chicken broth
- 2 cups cheddar cheese shredded
Instructions
- Preheat oven to 350. (skip if pre-making)
- Melt butter over medium heat.
- Add flour and cook for about 1 minute.
- Slowly add chicken broth, whisking constantly.
- Bring to simmer, whisk occasionally, until thickened.
- Remove from heat. (If pre-making, let sauce cool)
- Mix chicken, broccoli, rice, sauce, and cheese.
- Place in greased 9x9 pan and top with more cheese (optional).
- Bake for 25-30 minutes or until hot and bubbly.
