Instructions
Prepare chicken by cooking in skillet on stove in 1 tablespoon of olive oil over medium low heat until done. Alternatively, cook chicken on grill.
Chop remaining salad ingredients and make salad.
Mix together ingredients for Chipotle dressing either in a food processor or blender.
Top salad with dressing.
