ears of corn
cooked (we boiled ours and then tossed it on the grill for a couple of minutes for flavor)

15oz can Mrs. Grimes Black Beans
1
15oz can Mrs. Grimes Dark Red Kidney Beans
1
tomato
diced
½
red onion
chopped
½
green bell pepper
chopped
a handful of cilantro
chopped
juice of one lime
salt
to taste
pepper
to taste
Instructions
Cook corn by boiling for 5 minutes or until corn is fork tender. Toss on a hot grill for 1-2 minutes to flavor and add color.
Drain and rinse both cans of beans.
Dice tomato, chop onion, bell pepper and cilantro.
Cut lime in half.
Combine all ingredients, squeezing the juice of the lime over them and then stirring to mix everything.
Top with salt and pepper, to taste.
