Tender chicken simmered in a creamy coconut curry sauce and served over broad egg noodles. This easy one-pot curry is a cozy, budget-friendly weeknight dinner.
Cut the chicken into bite-size cubes, about 1 inch across.
Heat the olive oil in a Dutch oven or large, deep skillet over medium heat. Add the chicken and cook for 6 to 8 minutes, stirring occasionally, until no longer pink on all sides.
To thicken the curry (optional): Sprinkle the flour over the cooked chicken and stir for about 1 minute until it coats the pieces. Use 2 tablespoons of flour with coconut milk or 1 tablespoon with coconut cream.
Slowly pour in the chicken broth, stirring as you go (stir constantly if you added flour so the sauce stays smooth).
Stir in the coconut milk or coconut cream, the curry powder, and the salt.
Reduce the heat to medium-low and simmer, uncovered, for 20 to 25 minutes, stirring occasionally, until the chicken is cooked through and tender and the flavors have blended. Taste and add more salt if needed.
While the curry simmers, bring a large pot of salted water to a boil and cook the noodles according to the package directions. Drain.
Divide the noodles among bowls, ladle the curry over the top, and garnish with cilantro, green onions, cashews, and a squeeze of lime.
