This Crazy-Easy Cowboy Soup is a hearty one-pot mix of ground beef, beans, and potatoes in a savory Tex-Mex broth. Make it on the stovetop in under 45 minutes, or let it go low and slow in the slow cooker.
In a large soup pot over medium heat, add the olive oil and ground beef and cook until almost browned, crumbling into pieces as it cooks, about 5-6 minutes.
Add the onion, garlic, chili powder, cumin, oregano, paprika, salt and pepper and cook an additional 4-5 minutes, or until the onion is translucent.
Add the broth, kidney beans, diced tomatoes, canned tomatoes with green chilies (such as Rotel), frozen mixed vegetables, diced potatoes and corn, and stir to combine.
Bring to a boil, reduce to a simmer, and cook 15-20 minutes, or until the potatoes are tender.
Serve warm with some crusty bread, if desired.
Notes
Slow cooker option: Brown the ground beef with the onion and garlic in a skillet first, then transfer it along with all remaining ingredients to a slow cooker. Cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
