This easy chicken marsala soup brings the classic flavors of chicken marsala to a light, brothy bowl, with browned mushrooms, a dry Marsala wine reduction and shredded rotisserie chicken. It's ready in about 30 minutes.
4green onionsends removed and chopped thin, white and green parts separated
⅔cupdry Marsala wine
6cupschicken stocklow-sodium or unsalted, preferably organic
3cupsrotisserie chickenshredded (about 1 chicken)
Instructions
Heat a Dutch oven or heavy soup pot over medium-high heat. Add the olive oil and sliced mushrooms.
Cook the mushrooms, stirring only occasionally, until they release their juices and start to brown, about 6-7 minutes. Season lightly with salt and pepper.
Add the white parts of the green onions and cook for 1-2 minutes, stirring once or twice, until softened.
Increase the heat to high and pour in the Marsala wine. Let it bubble, scraping up any browned bits from the bottom of the pot, until reduced to about ⅓ of its original volume, about 4-5 minutes.
Add the chicken stock and shredded chicken. Bring to a boil, then reduce the heat to medium-low and simmer until the chicken is heated through, about 4-5 minutes. Taste and adjust the salt and pepper.
Remove from the heat, ladle into bowls and garnish with the green parts of the green onions.
Notes
Marsala: use dry Marsala from the wine aisle, not sweet Marsala or salted "cooking Marsala." Dry sherry is the best substitute. For an alcohol-free version, replace the wine with ⅔ cup extra chicken stock plus 1 tablespoon balsamic vinegar.Salt: rotisserie chicken and store-bought stock are already salted, so taste before seasoning.Storage: refrigerate up to 4 days or freeze up to 3 months.
