This Eggnog Coffee Cake is festive, flavorful, and filled with all your favorite holiday flavors. You're going to want to make this one a holiday baking staple!
Preheat your oven to 350°F (175°C). Grease and flour a 9"x13" baking pan.
In a mixing bowl, cream together butter, both sugars, and vanilla extract.
Add eggs.
Continue to beat until the mixture is creamy.
Gradually mix in half of the flour.
Then, stir in the eggnog. Add the remaining flour.
Beat the batter for 3 minutes until it appears shiny.
Pour the batter into your prepared pan.
For the streusel topping:
Mix sugar, flour and cinnamon in a separate bowl.
Add the pieces of cold butter
Use a butter knife or fork to “cut” the butter into the mixture until it forms a coarse, sandy texture.
Sprinkle the streusel topping evenly over the batter in the pan.
Bake the coffee cake for 45 to 55 minutes, or until it's golden brown.
Notes
I topped my coffee cake with a light eggnog drizzle. You can make this by whisking together confectioner’s sugar and a little bit of eggnog until it’s a drizzly consistency.
