Add all ingredients (flour, brown sugar, baking powder, and salt) to an airtight container. You can use a food storage container, jar, or even a Ziploc bag. Store in a cool, dry location until ready for use.
Prepare the Pancakes
When ready to make pancakes, mix together the dry pancake mix (approximately 1 cup), egg, milk, and oil. Add additional milk in tablespoon increments if the batter seems dry.
Cook the pancakes as normal. Drop batter onto a greased, medium-hot pan. When it begins to bubble, flip and cook other side. Remove from heat and repeat for all pancakes.
Serve with toppings such as butter, honey, or maple syrup.
