Soft, moist pumpkin muffins packed with pumpkin pie spice and brown sugar, then finished with a tangy cream cheese glaze. An easy, no-mixer fall bake for breakfast or snacking.
Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
In a large bowl, whisk together the oil, brown sugar, white sugar, eggs, vanilla, sour cream, and pumpkin puree until smooth.
Add the flour mixture to the pumpkin mixture and gently fold with a spatula just until no streaks of flour remain. Be careful not to overmix the batter.
Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
Bake for 15 to 18 minutes, or until the tops spring back when lightly pressed and a toothpick inserted in the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
For the glaze, whisk together the softened cream cheese, ½ cup of the powdered sugar, and 1 tablespoon of the milk in a small bowl until smooth. Add more powdered sugar to thicken or more milk to thin it until it drizzles in a thick ribbon.
Drizzle the glaze over the top of each cooled muffin with a spoon or a piping bag. Let the glaze set for a few minutes before serving.
