Preheat oven to 375°F, and line a baking sheet with parchment paper. Place powdered sugar in a small bowl and set aside.
In a large bowl, combine cake mix, eggs and vegetable oil
Mix until thoroughly incorporated. The mixture will be very thick.
Use a cookie scoop to portion the dough into tablespoon-sized balls.
Roll the dough balls into the powdered sugar.
Using your hand or the bottom of a cup, press the dough slightly to help it spread out better. (I also tried to shape some of them a bit so that the bottom was longer to ensure that the dough would spread to the bottom of the heart cut-out better.)
Bake for 9-11 minutes, or until the cookies start to turn slightly brown on the edges.
If you are shaping them with a cookie cutter: Allow the cookies to set for a few minutes before using the cookie cutter to cut out the heart-shape. Trim away any excess cookie that remains. (Yes, we are cutting these cookies after baking, not before.)
Transfer cookies to the baking rack to finish cooling.
