This shrimp and broccoli stir fry is a great way to get your daily dose of veggies and protein. A quick and easy meal that is both delicious and healthy.
In a small bowl, whisk together the broth, soy sauce, honey, rice wine vinegar, cornstarch, sesame oil, ginger, and garlic and set aside
In a large skillet over medium high, heat oil and add shrimp, then season with salt and pepper
Cook shrimp 2-3 minutes per side, or until pink and opaque, remove from pan and set aside
In the same pan, add the broccoli and a bit of water if the pan if dry, then cover and cook for at 3-5 minutes, or until the broccoli is a brighter green and is starting to turn tender
Add the sauce and then bring to a simmer until thickened
Add the shrimp back into the pan along with the green onions
Cook until everything is heated through
Serve over rice and garnish with sesame seeds and additional green onions if desired
