This Apple Spice Poke Cake is a moist spice cake soaked with a creamy apple pudding filling and topped with whipped topping, caramel and crunchy nuts. It starts with a cake mix and comes together in about an hour.
Preheat the oven to 350°F (or the temperature on your cake mix box). Lightly spray a 9x13 baking pan with nonstick cooking spray.
In a large bowl, combine the spice cake mix, eggs, water and vegetable oil. Mix with a hand mixer until smooth, about 2 minutes.
Pour the batter into the prepared pan. Bake for 26 to 29 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely on a wire rack, about 1 hour.
In a blender, combine the apple pie filling, vanilla instant pudding mix and milk. Blend until completely smooth and the apples are liquified.
Poke holes about 1 inch apart all over the cooled cake using the handle of a wooden spoon. Pour the apple pudding filling over the cake and spread it back and forth with a spatula so it fills in the holes.
Spread the thawed whipped topping evenly over the apple filling, all the way to the edges of the pan.
Drizzle with caramel sauce and sprinkle with chopped nuts. For the cleanest slices, refrigerate for 1 to 2 hours before cutting. Cut into squares and serve.
