Instructions
For the Cake:
Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9x13 baking dish with non-stick baking spray.
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
Cream Butter and Sugar: In a large bowl, beat the softened butter, sugar, vanilla extract, and eggnog until well combined.
Add Eggs: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet mixture until just combined.
Bake the Cake: Pour the batter into the prepared baking dish. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
For the Eggnog Cream Cheese Glaze:
Beat Cream Cheese Mixture: In a large bowl, use a hand mixer to beat the cream cheese, butter, and eggnog until smooth.
Add Powdered Sugar: Gradually incorporate the powdered sugar, beating until smooth.
Adjust Texture: If the glaze is too thick, add 3 tablespoons to ¼ cup more eggnog, aiming for a glaze-like consistency.
Frost the Cake: Pour the frosting over the warm cake. Let the cake cool completely.
Garnish: Once cooled, sprinkle white chocolate shavings over the top of the cake.
