    Take your holiday dessert game up a notch with this easy Eggnog Cake. Rich, flavorful, and topped with a creamy eggnog cream cheese frosting. Get ready to be the star of the holiday party!

    If you're looking for a crowd-pleasing holiday dessert that won't have you spending all day in the kitchen, this is the recipe for you! This Eggnog Cake is super simple to throw together - an easy sheet cake infused with eggnog and winter spices, then topped with a homemade cream cheese frosting. It's quickly become one of my favorite recipes for Christmas.

    Top it off with some white chocolate shavings for a holiday touch - and you have a dessert that's perfect for any festive occasion! This is the perfect cake for all those Christmas parties and holiday get-togethers.

    Tips and Tricks

    Use softened ingredients for the frosting. 

    Make sure your butter and cream cheese are at room temperature before making your cream cheese frosting, so you can get a nice creamy, smooth texture.

    Don't frost a warm cake! 

    Allow your cake to cool completely before adding the frosting or the white chocolate shavings. This is to make sure your frosting doesn't melt.

    Add more toppings. 

    I topped my eggnog cake with white chocolate shavings. But you can try a sprinkle of chopped almonds, coconut, chocolate chips or holiday sprinkles.

    Make your own Eggnog! 

    If you're feeling really ambitious, try making this cake with homemade eggnog. You can use alcoholic or non-alcoholic eggnog.

    Variations

    Cranberry-Eggnog Cake

    After adding the cake batter to your pan, add in a swirl of cranberry sauce before baking. Or try folding in a handful of dried cranberries.

    Almond-Eggnog Cake

    Swap out the vanilla extract for almond extract to give the cake a slightly different flavor.

    Make Eggnog Cupcakes! 

    This recipe can be made into cupcakes instead. Just pour the batter into lined cupcake tins, filling each about ⅔ of the way full. They will bake more quickly, taking just 15-20 minutes.

    Ingredients
     
     

    For the Cake:

    • 3 cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 teaspoon kosher salt
    • 1 cup unsalted butter softened
    • 2 cups sugar
    • 4 large eggs room temperature
    • 3 teaspoons pure vanilla extract
    • 1 ¼ cups eggnog

    For the Eggnog Cream Cheese Glaze:

    • 1 8 oz package cream cheese, softened
    • ¼ cup unsalted butter softened
    • ¼ cup eggnog plus more if needed
    • 2 cups powdered sugar
    • White chocolate shavings for garnish

    Instructions
     

    For the Cake:

    • Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9x13 baking dish with non-stick baking spray.
    • Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
    • Cream Butter and Sugar: In a large bowl, beat the softened butter, sugar, vanilla extract, and eggnog until well combined.
    • Add Eggs: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
    • Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet mixture until just combined.
    • Bake the Cake: Pour the batter into the prepared baking dish. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

    For the Eggnog Cream Cheese Glaze:

    • Beat Cream Cheese Mixture: In a large bowl, use a hand mixer to beat the cream cheese, butter, and eggnog until smooth.
    • Add Powdered Sugar: Gradually incorporate the powdered sugar, beating until smooth.
    • Adjust Texture: If the glaze is too thick, add 3 tablespoons to ¼ cup more eggnog, aiming for a glaze-like consistency.
    • Frost the Cake: Pour the frosting over the warm cake. Let the cake cool completely.
    • Garnish: Once cooled, sprinkle white chocolate shavings over the top of the cake.
