This easy green bean casserole starts with frozen green beans (no thawing needed!) simmered in chicken broth, then baked in a creamy mushroom sauce with cheddar and crispy French fried onions. Just six ingredients and ready in under an hour.
Preheat the oven to 350°F. Lightly grease a deep 9-inch pie dish or 1 ½-quart baking dish.
Bring the chicken broth to a boil in a medium saucepan over medium-high heat. Add the frozen green beans straight from the freezer (no need to thaw), return to a simmer and cook for 4 to 5 minutes, just until bright green and crisp-tender. Drain very well.
In a large bowl, stir the cream of mushroom soup and milk together until smooth. Fold in the drained green beans, half of the cheddar cheese and half of the French fried onions. Spread the mixture evenly in the prepared dish.
Bake uncovered for 30 minutes, until the sauce is bubbling around the edges.
Sprinkle the remaining cheese and French fried onions over the top and bake for 5 to 7 minutes more, until the cheese is melted and the onions are golden. Garnish with sliced green onions, if using, and serve warm.
Notes
No need to thaw: the frozen green beans go straight into the simmering broth. If you prefer to skip the stovetop, thaw the beans in the fridge overnight, pat them very dry and add 5 to 10 minutes to the first bake.Baking dish: a deep 9-inch pie dish or a 1 ½-quart casserole dish both work. Double the recipe in a 9x13-inch dish and add 5 to 10 minutes to the first bake.Make ahead: assemble without the topping, cover and refrigerate up to 2 days. Bake 35 to 40 minutes, then add the topping and bake 5 to 7 minutes more.
