In a large bowl, whisk together all the dry ingredients.
Add greek yogurt and mix well. Use your hands to knead it together, if you want.
On a floured surface, roll out small rounds of the dough.
Over medium heat, warm a skillet or griddle with oil.
Cook 1–2 flatbreads at a time (depending on how large your skillet is) for approximately 1 minute on each side, or until it begins to brown.
Remove and enjoy with a little butter, if desired.
