Preheat oven to 375 degrees Fahrenheit (190 degrees C). Line a baking sheet with parchment paper.
In a medium bowl, combine the diced apples, cinnamon, flour, and brown sugar with 1 tablespoon of the melted butter; stir until the apples are evenly coated.
Unroll the crescent dough and separate into 8 triangles. Lay each triangle flat on the prepared baking sheet and gently stretch it out slightly.
Spoon about a tablespoon of the apple mixture onto the wide end of each triangle. Roll up from the wide end to the point, then fold the ends of the dough underneath and pinch to seal so the filling doesn't leak out during baking.
Brush the tops of the bites with the remaining melted butter. Bake for 10-12 minutes, until puffed and golden brown. Cool for a few minutes before serving.
