This easy, no-bake pumpkin cream cheese filling whips up in 10 minutes with cream cheese, sweetened condensed milk, pumpkin, and warm spices. Layer it into cakes and pastries, or serve it as a fall fruit dip.
Let the cream cheese sit at room temperature for 45 to 60 minutes, until it is completely soft and presses in easily.
In a large mixing bowl, beat the cream cheese with an electric hand mixer (or in a stand mixer fitted with the paddle attachment) on medium speed for 1 to 2 minutes, until completely smooth. Scrape down the sides of the bowl.
With the mixer on low speed, slowly pour in the sweetened condensed milk and beat until smooth.
Add the pumpkin puree, vanilla, cinnamon, nutmeg, and cloves. Beat on medium speed for 1 to 2 minutes, scraping the bowl as needed, until the filling is fully combined, light, and fluffy.
Serve right away as a dip, or cover and refrigerate for at least 2 hours to firm up before using as a filling for cakes, pastries, or no-bake desserts.
Notes
This recipe makes about 5 cups of filling (twenty ¼-cup servings). If you only plan to serve it as a dip, you can easily cut the recipe in half.For spreading between cake layers or piping into pastries, refrigerate the filling for at least 2 hours (or overnight) so it firms up. Use plain canned pumpkin, not pumpkin pie filling. You can substitute 2 teaspoons of pumpkin pie spice for the cinnamon, nutmeg, and cloves.Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months. Thaw overnight in the refrigerator and beat briefly to make it smooth again.
