This Pumpkin Meringue Pie adds a delicious and elegant twist to everybody's favorite holiday dessert. Rich and creamy pumpkin pie base is topped with a light and fluffy meringue topping. Yum!
Combine all of the ingredients for the pumpkin pie filling and mix well. Pour into the pie crust.
Bake pie for 15 minutes. Then reduce heat to 350 degrees and continue baking for 30 more minutes.
To make the meringue, add egg whites, sugar and cream of tartar to a mixing bowl, and beat all three ingredients together until stiff peaks form.
Spread meringue over the top of the pie (when it has finished baking in step 3) to the edge of the crust, sealing the pie.
Bake in a 350-degree oven for an additional 15 minutes.
Chill before serving.
Notes
For the pie crust: The easiest option is to use a frozen deep dish pie crust. Then you can simply add the filling and bake. Alternatively, you can use a refrigerated or homemade pie crust and press it into a deep pie plate, such as this one.
