Buttery, spicy Cajun shrimp cooked in one skillet with just three ingredients. It's ready in about 10 minutes, so it's perfect for busy weeknights, and it's great over rice, pasta or in tacos.
1lb.medium raw shrimppeeled and deveined with tails on, rinsed and patted dry
2tbsp.Cajun seasoningstore-bought or homemade (see notes), or to taste
Parsleychopped, for garnish
Instructions
Pat the shrimp dry with paper towels.
Melt the butter in a large skillet over medium-high heat until it's foamy.
Add the shrimp to the pan in a single layer and sprinkle them evenly with the Cajun seasoning. Cook without stirring for 2 to 3 minutes, until the undersides are pink.
Turn the shrimp so the cooked sides face up and cook 1 to 2 minutes more, just until they're opaque and pink all the way through. Don't overcook.
Remove from the heat, sprinkle with chopped parsley and serve immediately with the pan butter spooned over the top.
Notes
Homemade Cajun seasoning: Mix 2 teaspoon smoked or sweet paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried oregano, ½ teaspoon dried thyme, ½ teaspoon black pepper, ½ teaspoon salt and ¼ to ½ teaspoon cayenne pepper. Makes about 2 ½ tablespoons.Don't overcook: The shrimp are done as soon as they're opaque and pink and curl into a loose "C" shape (120 to 125°F). Take them off the heat right away.Frozen shrimp: Thaw completely and pat dry before cooking.Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a skillet over medium-low heat.
