Roasted Chili Corn Salsa - Chipotle Copycat Recipe!
This Roasted Chili Corn Salsa is packed with flavor from fresh roasted corn, spicy green chiles, and tangy red onion. It tastes just like the Chipotle recipe you love, and it's easy to make in just 20 minutes!
Ingredients
- 2 cups corn kernels fresh or frozen
- 4.5 oz green chilies canned
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 jalapeno seeded and minced
- ¼ cup red onion minced
- 2 tablespoons cilantro minced
- 1 lime juiced
Instructions
- Preheat oven to 425 F, line a baking sheet with parchment paper and set aside
- In a large bowl, stir together the corn kernels, green chilies, olive oil, salt and garlic powder.
- Then spread onto the prepared baking sheet and bake in preheated oven for 15 minutes, stirring once at the halfway point
- Allow the corn to cool.
- Then transfer to a large bowl and stir in the jalapeno, red onion, cilantro, and lime juice
- Serve with tortilla chips
