Tender shredded chicken, white beans, corn, and green chiles simmer all day in green enchilada sauce for an easy, hearty crock pot white chicken chili. Just dump, set, and dinner's ready!
Add the beans, corn, onion, garlic, green chilies, green enchilada sauce, chicken broth, oregano, cumin, and white pepper to a 6-quart slow cooker. Stir to combine.
Lay the chicken breasts on top of the chili mixture in a single layer.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken reaches 165°F and shreds easily.
Transfer the chicken to a cutting board and shred it with two forks. For a thicker chili, mash about 1 cup of the beans against the side of the slow cooker. Stir the shredded chicken back in and season with salt to taste.
Ladle into bowls and top with diced avocado, fresh cilantro, and a dollop of sour cream.

Stovetop method: Simmer everything, covered, in a Dutch oven over medium-low heat for 30 to 40 minutes, until the chicken is cooked through, then shred and serve.Creamy variation: Stir in 4 ounces of softened cream cheese and ½ cup of sour cream after shredding the chicken.
