Instructions
Add strawberries, mint leaves, and lime juice to a cocktail shaker. Gently muddle to release juices and oils.
Add the rum and a handful of ice. Shake well for about 10–15 seconds until chilled. Strain the mixture into a serving glass.
Top with soda water and gently stir to combine.
Add two scoops of ice cream into each glass.
Add two small scoops of strawberry ice cream on top.
Garnish, if desired, and serve immediately with a straw and spoon.
