A fluffy white cake soaked with a creamy blend of peach pie filling and heavy cream, topped with whipped topping and a dusting of nutmeg. An easy make-ahead summer dessert.
1cupsliced peachesfresh, or canned and drained, for topping
Instructions
Preheat the oven and grease a 9x13-inch baking pan. Prepare and bake the cake mix according to the package directions (usually 30 to 35 minutes). Let the cake cool completely, about 1 hour.
Using the round handle of a wooden spoon, poke holes all over the top of the cake about 1 inch apart, pushing about three-quarters of the way down.
In a blender, blend the peach pie filling and heavy cream for 20 to 30 seconds, until smooth and pourable. Pour it evenly over the cake, making sure it runs into the holes; use an offset spatula to nudge it into any holes it misses.
Spread the whipped topping evenly over the peach layer and sprinkle with the nutmeg.
Cover and refrigerate for at least 4 hours, or overnight, until the filling is set.
Just before serving, top with the sliced peaches. Cut into 12 squares and serve cold.
Notes
Cake mix boxes are now usually 13.25 to 15.25 ounces; any size from 13.25 to 18.25 ounces works in a 9x13 pan. Bake time depends on the brand, so follow the box.
For a peach poke cake with canned peaches, replace the pie filling and cream with a drained 15-ounce can of sliced peaches blended with ½ cup sweetened condensed milk.
For a peach jello poke cake, pour a 3-ounce box of peach Jell-O (dissolved in 1 cup boiling water plus ½ cup cold water) over the poked cake first, chill 30 minutes, then continue with the peach filling.
Store covered in the refrigerator for up to 4 days, or freeze (without the peach slices) for up to 2 months; thaw overnight in the fridge.
