A quick dessert with tortillas and cream cheese: sweetened cream cheese rolled up in flour tortillas, pan-crisped until golden and coated in cinnamon sugar. Ready in about 15 minutes.
In a small bowl, stir the softened cream cheese and 1 teaspoon sugar together until smooth. Taste and add a little more sugar if you like it sweeter.
Warm the tortillas in the microwave for 10 to 15 seconds so they are soft. Divide the cream cheese mixture between the two tortillas and spread it in a thin, even layer almost to the edges. Scatter the berries over the top, if using.
Roll each tortilla up snugly, finishing with the seam on the bottom.
Heat the olive oil in a skillet over medium-low heat. Add the roll-ups seam side down and cook for 1 to 2 minutes per side, turning, until lightly golden all over. Watch closely so they don't overbrown.
Meanwhile, mix the 1 tablespoon sugar and the cinnamon on a plate. Roll or sprinkle the warm roll-ups in the cinnamon sugar right away, using as much as you like.
Slice each roll-up in half (or into bite-size pieces) and serve warm.

Air fryer: Brush the roll-ups lightly with oil or melted butter and air fry seam side down at 375°F for 5 to 6 minutes, turning halfway, until golden and crisp.Oven: Bake seam side down on a parchment-lined sheet at 400°F for 10 to 12 minutes until golden. Best for a big batch.Cheesecake-style filling: Beat ¼ teaspoon vanilla and a squeeze of lemon juice into the cream cheese and use powdered sugar in place of granulated.Storage: Best eaten fresh.
