Instructions
In a slow cooker, stir together the orange juice, sugar, and cinnamon stick until the sugar is mostly dissolved.
Cut the orange in half and squeeze its juice into the slow cooker. Press the whole cloves into the outside of the squeezed orange halves (or place them in a mesh tea ball) and add them to the juice.
Cover and cook on HIGH for 2 hours (or LOW for 3 to 4 hours), until the juice is hot and fragrant.
Pour in the chilled sparkling wine and stir gently. Switch the slow cooker to LOW or WARM, cover, and heat for 15 to 20 minutes, just until warmed through. Do not let it boil.
Remove the clove-studded orange halves and the cinnamon stick. Ladle into warmed heatproof glasses or mugs and garnish each with a cinnamon stick and an orange slice. Keep the slow cooker on WARM for refills.
Notes
Stovetop method: Simmer the orange juice, sugar, cinnamon, and clove-studded orange in a saucepan over medium-low heat for 20 to 30 minutes. Add the sparkling wine and warm over low heat for about 5 minutes, without boiling.Sweetness: Orange juice varies in sweetness, so taste the mulled base before adding the wine and adjust the sugar. Use ½ cup sugar if you're using a sweet sparkling rosé.Non-alcoholic: Swap the sparkling wine for sparkling white grape juice or ginger ale.Glassware: Warm glasses in hot tap water before filling, or use heatproof mugs, so hot liquid doesn't crack cold glass.Make ahead: The mulled juice base (without wine) keeps in the fridge for 3 days or the freezer for 3 months. Reheat, then add the chilled wine just before serving.
