This easy Weight Watchers Taco Soup is a hearty one-pot meal made with lean ground turkey, kidney and pinto beans, corn and tomatoes simmered in taco spices. It's filling, freezer-friendly and very low in WW Points.
In a large stock pot or Dutch oven over medium-high heat, brown the ground turkey, breaking it up as it cooks, about 6 to 8 minutes. Drain any excess liquid and return the pot to the stove.
Add the diced bell pepper and onion and cook, stirring, for 3 to 4 minutes until they start to soften.
Stir in the corn, diced tomatoes, tomato sauce, kidney beans, pinto beans, cumin, garlic powder, paprika, onion powder, black pepper and water. Add about half of the salt for now.
Bring the soup to a boil, then reduce the heat to medium-low and simmer, partially covered and stirring occasionally, for 45 minutes until the flavors blend and the soup thickens slightly.
Taste and add the remaining salt if needed. Ladle into bowls and serve with your favorite toppings.

On the current WW Points program, the beans, corn, tomatoes, pepper and onion are all ZeroPoint foods, and so is ground turkey made only from breast meat (99% lean), so the soup can come in at 0 Points per serving when made with ground turkey breast. Regular 93% lean ground turkey will add some points.
