This copycat Chili's Southwest Chicken Soup is a smoky, brothy Tex-Mex soup loaded with tender chicken, corn, tomatoes and green chiles. It's made in one pot in about 45 minutes and tastes just like the restaurant favorite.
In a large Dutch oven or heavy soup pot, heat the olive oil over medium heat. Add the onion and celery and cook, stirring frequently, for 3 to 4 minutes, until the onion is translucent.
Add the minced garlic, chipotle peppers, chili powder, cumin and salt. Cook, stirring constantly, for an additional 1 to 2 minutes, until fragrant.
Pour in the chicken stock, diced tomatoes with their juices, cooked chicken, corn and green chiles. Stir well, raise the heat to medium-high and bring the soup to a boil.
Reduce the heat to low, cover with the lid slightly ajar and simmer for 15 to 20 minutes, stirring occasionally, to let the flavors blend. Taste and adjust the salt.
Ladle into bowls and serve warm, topped with a squeeze of lime, tortilla strips, shredded cheese and cilantro if desired.
