    Loaded Italian Sliders

    These Loaded Italian Sliders are a quick and easy, super tasty way to spice up any weeknight meal!  They are also an excellent addition to your next party or gathering. With bold Italian flavors, these are sure to please!

    Cold weather is officially here in my part of the country and, well, I don't like it.  What I do like are cold weather comfort food dinners like these sliders!

    I'm one hundred percent a summer person.  Until it comes to the food.  I think we all just enjoy eating a whole lot more when it's not blazing hot.

    I love getting cozy in my kitchen around the warm oven, and all of the delicious smells of fresh baked goodies.

    But, let's be real.  We don't always have time for that.  We're busy parents!  We just pray that we can get something on the table between our kids piano lessons and dance class.

    Something quick.  Something warm, and filling.

    Sliders that take all of 20 minutes to prepare, are certainly the answer!

    If you happen to find yourself with some extra time and making these sliders up on the weekend - I highly recommend using my 30 minute dinner roll recipe, which you can find right HERE.

    If not, go right ahead with the store bought dinner rolls.  On busy weeknights, that's exactly what I do.

    I find that these are also a huge hit at football/impromptu holiday gatherings.  You can easily double this recipe and whip up two pans for a crowd.

    Another win - these reheat really well.  Perfect for your kiddos lunchbox!

    So, what's included in these sliders.

    Pepperoni - I like to get the BIG round pepperoni that is sliced super thin from the deli.

    Salami - Again, thin slices are best. They kind of melt in your mouth.

    Ham - I personally don't grab deli ham.  I get the good old Oscar Mayer thin sliced ham, and it's delish.

    Big slices of provolone, and fresh grated mozzarella.  The freshly grated melts a little better, but packaged mozzarella is totally ok if that's what you have!

    Grab a couple of bell peppers, I typically use two, a red and an orange.  Then, a red onion.  Just sautee them up in a little olive oil for a few minutes so they're soft and flavorful.

    Last but not least, marinara!  I like to put the marinara directly on the sliders.  But, you can leave it as a side for dipping if you wish.  My kids even like to dip these in Italian dressing!

    Ingredients
     
     

    • ½ large red onion sliced
    • 2 bell peppers sliced
    • 1 tablespoon olive oil
    • 12 pre-made dinner rolls
    • 24 slices pepperoni
    • 24 slices salami
    • 24 slices ham
    • 12 slices provolone cheese
    • ½ cup mozzarella cheese
    • ¼ cup marinara sauce

    Instructions
     

    • Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with non stick cooking spray and set aside.
    • Heat olive oil in a medium skillet over medium heat. Cook onion and bell pepper until tender, about 5-7 minutes.
    • Slice tops off of rolls, and place bottoms of rolls into the prepared baking dish.
    • Layer bottoms of rolls with pepperoni, salami, ham, cheeses, pepper and onion mixture, and a spoonful of marinara sauce.
    • Replace tops of rolls.
    • Bake in preheated oven for 10 minutes, or until cheese is melted.
