Key Ingredients & Substitutions
Chicken Breast
Lean and fast-cooking, chicken breasts are ideal for a quick stir fry. But feel free to substitute with chicken thighs if you prefer a juicier bite.
Fresh Pineapple
Fresh is key for that burst of sweetness and acidity. In a pinch, canned pineapple can work too, but fresh is definitely the winner here.
Teriyaki Sauce
The homemade sauce is made with a base of chicken broth, soy sauce, and honey for that flavorful umami finish. If short on time, a quality store-bought teriyaki sauce can be a convenient substitute.
Rice Wine Vinegar & Sesame Oil
These ingredients add depth to the teriyaki sauce. If necessary, apple cider vinegar can replace the rice wine vinegar and a neutral oil can be used in place of the sesame oil.

Helpful Tips
Adjust the Consistency of the Sauce
If your teriyaki seems to be too thin, try whisking in a bit more cornstarch until it reaches the perfect consistency.
Chicken Prep
Ensure the chicken is cut into even, bite-sized pieces for uniform cooking. I cut mine into cubes, but strips work fine as well.
Getting that Veggie Crunch
Add the vegetables towards the end of cooking to retain their vibrant color and crisp texture. if you add them too soon, they will get mushy.

Variations
Make it Spicier
Add a dash of sriracha or chili flakes to the teriyaki sauce for a kick.
Make it Vegetarian
Swap the chicken for tofu or tempeh for a plant-based version of this recipe.
Rice Alternatives
Serve over cauliflower rice for a lower carb option. Or try serving with quinoa for an extra boost of protein.
Add Extra Veggies
Stir in some broccoli, snap peas, or carrots for an additional veggie boost.
