    Fresh Pineapple

    Fresh is key for that burst of sweetness and acidity. In a pinch, canned pineapple can work too, but fresh is definitely the winner here.

    Teriyaki Sauce

    The homemade sauce is made with a base of chicken broth, soy sauce, and honey for that flavorful umami finish. If short on time, a quality store-bought teriyaki sauce can be a convenient substitute.

    Rice Wine Vinegar & Sesame Oil

    These ingredients add depth to the teriyaki sauce. If necessary, apple cider vinegar can replace the rice wine vinegar and a neutral oil can be used in place of the sesame oil.

    Ingredients
     
     

    Teriyaki sauce:

    • 1 cup chicken broth
    • ¼ cup soy sauce
    • ¼ cup honey
    • 2 tablespoons cornstarch
    • 1 tablespoon rice wine vinegar
    • 2 cloves garlic minced
    • 1 teaspoon sesame oil

    Stir fry:

    • 2 tablespoons oil divided
    • 1 lb chicken breast cut into bite sized cubes
    • 1 red onion peeled and cubed
    • 1 green pepper cubed
    • ½ large pineapple peeled, cored, and cut into bite size pieces
    • Rice for serving (optional)
    • Sesame seeds and sliced green onion for garnish (optional)

    Instructions
     

    • In a large bowl, whisk together the chicken broth, soy sauce, honey, cornstarch, rice wine vinegar, minced garlic and sesame oil until smooth; set aside

    • In a deep skillet, heat the oil over medium high heat. Add the cubed chicken and cook until browned on all sides.(but not cooked through)
    • Add the onion and green pepper and cook an additional 3-4 minutes or until the veggies start to soften.

    • Add the cubed pineapple and the teriyaki sauce and cook for an additional 4-5 minutes, or until the sauce has thickened and the chicken is cooked through.

    • Serve immediately over rice with sesame seeds and sliced green onion.
