Summertime.
It's all about family and friends and making memories that will last a lifetime. Barbecues, family get-togethers, neighborhood fire pits, time spent with friends.
No matter which scenario resembles your summer plans, memories will be made, and those will give you something special to look back on and cherish.
Food often plays a central part in gatherings. Like pulled pork. And ice cream. Not together of course.
During the summer, and really all year long, we like to whip up easy recipes that don't take lot of time to make. Because lets face it, time is scarce and oftentimes we're in a hurry between one activity and another.
And while you might think that things would slow down in the summer, sometimes they speed up. If we're not careful, the summer might just pass us by quicker than we'd planned.
That's why its even more important to kick back and relax and enjoy time spent with friends and family. Enjoy a slow cooked pulled pork sandwich, open-faced and loaded down with coleslaw. Savor a delicious ice cream cone filled with EDY’S® SLOW CHURNED® Caramel Delight Light Ice Cream. And embrace the summer.
Our dessert is all about EDY’S® SLOW CHURNED® Caramel Delight Light Ice Cream and EDY'S SLOW CHURNED Vanilla Light Ice Cream. Because when something so tasty has already been created for you...well, we think its a good idea to skip making dessert and go for the gold.
Ice cream made with real, simple ingredients like fresh milk and cream, containing no artificial colors or flavors and no GMO ingredients...well, that has to be good. "Simply made, simply delicious"--and that my friend is the ultimate mantra.
Simple Slow Cooked Pulled Pork Sandwiches
Since our readers constantly ask for simple recipes, we're giving you just that. Here is a super easy to make pulled pork sandwich that is both tender and flavorful, and you'll honestly want to make this one again and again.
Set it and forget it.
That's the slow cooker we're talking about. Seriously...this is a recipe that you're going to want to slow cook all day long. We're talking 8-10 hours of cooking with the most quintessential aroma of pulled pork that you could possibly imagine.
If you cook it over night like we did, you'll wake up to a growling stomach telling you that it's time to go to the kitchen and dig into this crock of goodness.
But don't take my word for it.
You can make these Slow Cooked Pulled Pork Sandwiches with no stress whatsoever. And here is all you need to do it:
- Place pork loin in slow cooker, ours was a couple of pounds.
- Add in 1 can of cola.
- Pour 1 cup of barbecue sauce over the top.
- Set slow cooker to low and let that meat cook low and slow for 8 to 10 hours.
- Remove cooked meat from slow cooker and shred up using two forks. It should tear apart very easily.
- Return meat to slow cooker and mix together with remaining liquid.
- Serve over an open-faced bun and top with coleslaw. For this sandwich we used bagged coleslaw purchased at Walmart where we were shopping for our yummy EDY'S SLOW CHURNED ice cream.

We tested out both EDY'S SLOW CHURNED Caramel Delight Light Ice Cream and Vanilla Light Ice Cream, and let me just tell you--OH. MY. YUM!!
EDY'S Ice Cream is so delicious and when you're enjoying a delicious lighter version of the good stuff, we're pretty sure you'll find another reason to savor every bite. We sure did. Light ice cream. Hello!
Summer.
It's all about savoring every last moment.
And every last bite of ice cream. You know--the frozen food that cools us down in the heat of the day when we're dripping sweat because it's just so hot outside?
The kind of treat we share with family and friends and laugh with when they have have to lick up ice cream off the cone so it doesn't drip onto their fingers.
Ice cream. It's just a fun and deliciously flavorful semblance of summer to quickly gobble up before it melts away. And summer...is just so fleeting.
We found EDY'S Ice Cream at Walmart Supercenter, and have to say that when you find such a huge section of flavors (the photo below only shows about ⅓ of the EDY'S Ice Cream section)--you know you have struck gold.
There will be EDY'S Ice Cream demos in June at stores near you. Check this list to see if there is one in your area.
