Cauliflower Goat Cheese Soup
You cannot beat a bowl of soup, and this Cauliflower Goat Cheese Soup is just what the doctor ordered.
Let’s face it folks. Soup is good. It’s soothing for the soul and it warms you from the head to the toes. And, if you’re anything like me, some days that is exactly what you need.
I’m one of those strange people that can wear woolly boots in the middle of summer because sometimes my feet (even in the heat of a summer afternoon) can be freezing inside the house. Catch me in the winter, and I’ll be huddled under a blanket with a hat on. Yeah… that’s my story.
This quick and versatile soup makes a nice, light appetizer or a filling lunch when paired with a crisp, green salad.
Soups on…what’s your flavor?
Like I said, we LOVE soup around my house. It’s easy to whip up from scratch, which in my humble opinion is the best kind of soup. Homemade soup. That’s my number one.

One of the great things about cauliflower is how well it takes on the flavors of other ingredients. In the case of Cauliflower Goat Cheese Soup, the more pungent goat cheese adds an interesting and delicious dimension to the finished result. If you want more robust flavors, roast the cauliflower and onion before blending. The flavor will be more complex, but be aware the soup will take on a darker brown color as a result.
