Panera Greek Salad
Ingredients
- 1 head romaine lettuce chopped
- ½ cup sliced red onion
- ½ cup cherry tomatoes
- ½ cup feta crumbles
- ½ cup black olives
- 5-6 pepperoncini
- ½ cup olive oil
- Juice of half a lemon
- 3 tablespoons red wine vinegar
- 1 tablespoon mustard
- 1 teaspoon oregano
- 1 clove garlic minced
- ½ teaspoon salt
- ¼ teaspoon ground pepper
Instructions
- Divide the romaine lettuce, sliced red onion, cherry tomatoes, feta crumbles, black olives and pepperoncini between two large bowls
- In a small jar, add the olive oil, lemon juice, red wine vinegar, mustard, oregano, garlic, salt, and pepper
- Shake until well combined
- Pour dressing over top of salad and serve immediately
