Pick the right pears

Ingredients
- 3 lbs Barlett pears
- 2.5 cups sugar
- 2 tbsp fresh ginger finely minced
- Juice of 1 lemon
Instructions
- Begin by peeling the pears and removing their cores. Dice the pears into small pieces.
- Mince the ginger finely.
- Take a medium-sized pot and combine the diced pears, sugar, chopped ginger, and lemon juice.
- Place the pot over low to medium heat. Stir continuously until the sugar mostly dissolves.
- Allow the mixture to simmer gently for approximately 1 hour to 1 hour 30 minutes. Watch for the sugar to turn a golden hue and the pears to attain a jammy consistency. Once achieved, remove from the heat.
- Let the jam cool for roughly 30 minutes before transferring it into jars (or other covered containers) for storage in the refrigerator.
