Does Chocolate Meringue Pie Need Refrigerated
You need to initially allow the pie to cool down after you pull it from the oven. Just leaving on a baking rack to allow it to cool. Then cover and transfer to the fridge after an hour or so.
If you put directly in the fridge from oven the meringue can weep and begin to collapse as it cooled down too fast.
How Long Will Chocolate Pie Last In Fridge
You can store your pie in the fridge for 3-4 days. Just keep pie covered with a lid or even aluminum foil. Always use your best judgment on when you feel it is time to toss any leftovers you may have.
What If I Don’t Like Meringue
If you don’t like meringue you can still make the pie. Skip the step of putting meringue on and then cool and refrigerate pie as directed. Then once the pie is fully cooked you can eat as is, or top with whipped cream.

How To Make Chocolate Meringue Pie
Start by adding your sugar, cornstarch, gelatin, milk, and salt in a saucepan. Heat over medium-low heat making sure to whisk constantly to prevent clumping or burning. Then slowly add in your chocolate and melt. Allow it to come to a boil, and let it boil for one minute, then add in vanilla.
How to Temper Eggs
Now you want to take your beaten eggs and incorporate with about a cup of the pudding mixture in a separate bowl. You will want to whisk constantly and pour eggs in slowly so the hot pie filling doesn't cook the eggs. If you don't do this properly, you could end up with little lumps of cooked egg in your chocolate pie filling.
Once your eggs are properly mixed, pour the mixture back into the saucepan with the rest of the pie filling, and whisk it all together. Pour into a your prepared pie crust.
Then to make the meringue you add egg whites, cream of tartar and sugar into a bowl and beat until it forms peaks. Spread over the pie, and make sure to cover the edges of pie crust to seal the pie. Then bake for 15 minutes.

Chocolate Pie with Meringue
Ingredients
- 1 deep dish pie crust pre-baked
- 4 eggs separated
- ½ cup white sugar
- ½ cup dark brown sugar
- ¼ cup cornstarch
- 4- ounce envelope unflavored gelatin
- ½ teaspoon salt
- 2 ½ cups milk
- 1 cup semi-sweet chocolate chips
- 2 ounces dark chocolate squares chopped
- 1 tablespoon vanilla
- 6 egg whites 4 of the reserved egg whites plus 2 additional
- 2 teaspoon cream of tartar
- ⅔ cup sugar
Instructions
- Combine sugars, cornstarch, gelatin, salt and milk in a saucepan over medium-low heat, constantly whisking to combine. Add in chocolate and allow to come to a boil. Boil for one minute and remove from heat. Add vanilla.
- Beat egg yolks together and slowly pour one cup of the pudding mixture into the egg yolks while constantly whisking to prevent eggs from cooking. Pour egg yolk mixture back into the saucepan and mix all together. Pour into the pre-baked pie crust.
- To make the meringue, add egg whites, sugar and cream of tartar and beat all three ingredients together until still and able to form peaks.
- Spread meringue over the top of the pie to the edge of the crust, sealing the pie.
- Bake in preheated 350-degree oven for 15 minutes.
- Chill prior to serving.
