I always plan a special breakfast for Christmas morning. Usually I opt for something like a hashbrown casserole that's easy to make ahead of time, or these Christmas Tree Cinnamon Rolls. But this year my son has been on a big pancake kick, so I thought we would try something a little different - eggnog pancakes!
And I sure am glad we tried this out. The eggnog and nutmeg give these pancakes such a rich Christmas-y flavor. And they came out perfectly fluffy and golden too.
You can enjoy a dollop of butter, a generous slathering of maple syrup, a sprinkle of cinnamon and of course the ultimate holiday treat – a big dollop of whipped cream. Now that's a breakfast worth waking up for!
Helpful Tips
Make it ahead of time.
If you're making this for Christmas morning, I suggest mixing up the pancake batter in advance and storing it in the fridge overnight. Just let it come up to room temperature in the morning, and then make your pancakes.
Use a griddle!
You can use any nonstick pan for pancakes, but I recently got myself one of these double burner griddles - and wow - it's so much faster and easier to use this. I can make 3-4 pancakes at once
Don't skip the toppings.
Serve your eggnog pancakes warm with your fave toppings. You can go the traditional route with butter and maple syrup. Or get festive with a sprinkle of cinnamon-sugar, whipped cream, or even crushed peppermints or candy canes.
Use homemade eggnog.
You can certainly use store bought eggnog for these pancakes. But if you're feeling extra festive, try making it with my homemade eggnog! I made mine without alcohol - since it's for breakfast and all. 😉
Variations
Make waffles instead
You can use this same batter to make Eggnog Waffles as well!
Apple Pie Eggnog Pancakes
Add a teaspoon of apple pie spice to the original eggnog pancake batter and top the pancakes with caramelized apples.
Eggnog French Toast Pancakes
Instead of pancake batter, dip thick slices of bread in the eggnog mixture. Fry both sides in butter.
Eggnog Banana Pancakes
Once the pancake batter is ready mix in a diced banana. Serve the pancakes with a sprinkle of cinnamon and a drizzle of syrup.
Eggnog Orange Pancakes
Replace the nutmeg with one teaspoon of orange zest and a few drops of orange extract.
Eggnog Cranberry Pancakes
Add in ¼ cup of dried cranberries to the pancake batter before cooking.

Eggnog Pancakes
Ingredients
- 2 Cups all purpose flour
- 1 Tbsp baking powder
- 2 Cups eggnog homemade or storebought
- 2 Eggs
- 2 Tbsp vegetable oil
- ½ Tsp nutmeg
- 1 Tsp vanilla extract
- Butter for greasing the griddle
Instructions
- Whisk the flour and baking powder in a bowl. Add eggnog, eggs, vegetable oil, nutmeg, and vanilla.
- Whisk together until well mixed.
- Heat a nonstick pan or griddle on the stovetop over medium-high heat. Pour ¼ cup of batter per pancake and cook for 2 minutes or until bubbles appear on top. Flip and cook for an additional minute.
- Continue with the remaining batter, until all your pancakes are made!
