I always plan a special breakfast for Christmas morning. Usually I opt for something like a hashbrown casserole that's easy to make ahead of time, or these Christmas Tree Cinnamon Rolls. But this year my son has been on a big pancake kick, so I thought we would try something a little different - eggnog pancakes!
These are a bit similar to the seasonal eggnog pancakes that they served at IHOP during the holiday season. (If you're a fan of their panakes, be sure to try my copycat Strawberry Cheesecake pancakes too!) But of course I had to make my own version to eat all year long.
And I sure am glad we tried this out. The eggnog and nutmeg give these pancakes such a rich Christmas-y flavor. And they came out perfectly fluffy and golden too.
You can enjoy a dollop of butter, a generous slathering of maple syrup, a sprinkle of cinnamon and of course the ultimate holiday treat - a big dollop of whipped cream. Now that's a breakfast worth waking up for!

Quick Tips
Make it ahead. If you're making this for Christmas morning, I suggest mixing up the pancake batter in advance and storing it in the fridge overnight. Just let it come up to room temperature in the morning, and then make your pancakes.
Use a griddle. You can use any nonstick pan for makign pancakes, but I recently got myself one of these double burner griddles - and wow - it's so much faster and easier to use this. I can make 3-4 pancakes at once
Use homemade eggnog! You can certainly use store bought eggnog for these pancakes. But if you're feeling extra festive, try making it with my homemade eggnog! I made mine without alcohol - since it's for breakfast and all. 😉
Topping Suggestions
Don't skip the toppings! Serve your eggnog pancakes warm with your fave toppings. Here are some creative ideas:
- Traditional butter and maple syrup.
- Dust with powdered sugar and a sprinkle of extra nutmeg.

Eggnog Pancakes
Ingredients
- 2 Cups all purpose flour
- 1 tablespoon baking powder
- 2 Cups eggnog homemade or storebought
- 2 Eggs
- 2 tablespoon vegetable oil
- ½ teaspoon nutmeg
- 1 teaspoon vanilla extract
- Butter for greasing the griddle
Instructions
- Whisk the flour and baking powder in a bowl. Add eggnog, eggs, vegetable oil, nutmeg, and vanilla.
