    Strawberry Poke Cake Recipe

    Strawberry Poke Cake recipes are easy summer desserts to make. Not only are the ingredients simple and probably in your pantry, but making strawberry desserts while strawberries are in season means that it is also an inexpensive dessert to make.

    When are Strawberries in Season?

    Strawberry season is dependent on where you live, but in the United States, peak strawberry season runs from April to June. Of course, depending on varieties of strawberries and growing methods used in the commercial strawberry industry, the growing season is extended throughout most of the year, with most of the crops being raised in California and Florida, for those berries that aren't imported from countries further south.

    What Ingredients are in Strawberry Poke Cake?

    Strawberry Poke cakes have a variety of ingredients. It's all dependent on the recipe that you use, or if you use a recipe at all. 

    One of the things I really like about making poke cake recipes is that it is easy to come up with new twists and flavors on a dessert idea that is really difficult to mess up. If you don't have all the ingredients on hand for a specific recipe and you are comfortable winging it, making a new poke cake recipe can be a lot of fun.

    Some of the basic ingredients used in strawberry poke cakes are: cake mix, pudding mix, strawberry jello, strawberries, cream cheese, whipped topping.

Make a cake from scratch, and then use the other ingredients listed.     Strawberry Poke Cake is an easy dessert recipe to make. Cake mix recipes allow for an easy baking shortcut and mean you can have this tasty poke cake dessert on the table tonight. The strawberry cake filling is amazing and uses fresh strawberries. 

    After the cake has baked, poke holes into the cake. It is best to use a small wooden spoon to get a wider hole, which will allow more filling into it.  This poke cake has a thicker strawberry pudding filling than many poke cakes that use a colorful gelatin-based 'filling'.

    Next, mix together the ingredients for the filling. The strawberry poke cake filling used in this recipe is a tasty combination of pureed fresh strawberries and pudding.

    Add the cake filling and spread it around to fill in all the holes. Then top the cake is with whipped cream, fresh strawberries and lemon zest.

    Ingredients
      

    • Strawberry cake mix
    • 3 eggs
    • ⅓ cup vegetable oil
    • 1 cup water
    • 2 cups strawberries
    • 3.4 ounce vanilla pudding mix
    • 1 cup milk
    • 8 ounces whipped topping
    • Additional sliced strawberries and lemon zest for top of cake

    Instructions
     

    • Mix together and bake cake according to package instructions.
    • In a food processor, pulse strawberries until pureed. Add in pudding mix and milk and blend.
    • Poke holes in cake and then pour the strawberry/pudding mixture over the cake. Using a spatula, spread the pudding mixture over the cake and into the holes.
    • Top the cake with whipped topping and sliced strawberries and lemon zest.
