Pumpkin Cream Cheese Filling - A Shake Shortcut!
I've been making this Pumpkin Cream Cheese filling for years. If you want a quick recipe shortcut, whip up a batch of this! You can use it in your milkshake in place of the cream cheese, pumpkin, sugar and pumpkin pie spice.
Plus, you can use the extra as a dessert dip or spread onto bagels for a pumpkin-y breakfast treat. It's so good.
Tips & Variations
Pumpkin Puree - This recipe calls for canned pumpkin puree. Be sure to use plain puree pumpkin and not pumpkin pie filling (which contains spices and sweeteners). The only ingredient on the label should be pumpkin!
Lighten it up - This is a heft shake. If you prefer a lighter version, feel free to use a light cream cheese and low fat milk (or dairy free milk).
Make your own ice cream! - If you are feeling really ambitious, you can make your own homemade vanilla ice cream for this pumpkin cheesecake shake!

Ingredients
- 3 cups vanilla ice cream
- 1 cup whole milk
- 8 ounces cream cheese
- 15 ounces pumpkin puree canned
- ¼ cup granulated sugar
- 2 teaspoons pumpkin pie spice
- ½ cup chopped pecans
- whipped cream to garnish
Instructions
- Combine all ingredients in a blender and mix until well blended.
- Pour into glasses, top with whipped cream and pecans and serve.
