Don't get me wrong, if you have the time, making pie crust from scratch is not only tasty, but can be therapeutic. However, if you're in a time crunch or simply don't want to bother with from scratch pie crust, refrigerated pie crust from your local store works great.

- Refrigerated pie crust – Store-bought crust keeps this recipe quick and easy, but a homemade crust works just as well if you'd rather make your own.
- Granulated sugar – Sweetens the custard-style filling. Light brown sugar can be swapped in for a slightly deeper, caramel-like flavor.
- Corn starch – Corn starch thickens the filling so it sets up firm enough to slice cleanly once the pie has cooled.
- Eggs – Bind the filling together and give it that dense, custardy texture, similar to a pecan pie.
- Unsalted butter, melted – Adds richness to the filling. Salted butter works in a pinch — just know the filling will be a touch saltier.
- Dark corn syrup – Dark corn syrup gives the filling its deep sweetness and gooey texture. Light corn syrup works too, for a milder flavor.
- Almond extract – Almond extract is the star flavor here — a little goes a long way, so stick to the amount called for.
- Apples, peeled and chopped – A firm, tart baking apple like Granny Smith holds its shape best. Honeycrisp or Braeburn apples work well too.
- Almonds, sliced and whole – Almonds add crunch throughout the filling. Toast them lightly beforehand for even more almond flavor.

HOW TO MAKE ALMOND APPLE PIE
Preheat your oven and prep your pie crust. You are welcome to buy roll out refrigerator pie crust, or make homemade. It is all about personal preference.
Then in a bowl you will work on adding in your diced apples, and all other filling ingredients. I do a mix of chopped almonds and whole almonds for texture. Top with added pie crust if you desire then bake.
DO YOU PEEL APPLES FOR APPLE PIE
I did peel my apples for this pie. Sometimes the skins of apples will give you a chewy texture if you bake with the skins on. Make sure that you core your apple as well so no seeds get in the pie.
You can use a peeler to get rid of the skin of the apple, then an apple corer to tackle the seeds. Then you can dice into small pieces, or slice into thin pieces, however, you prefer on texture for your pie.
HOW TO DECORATE APPLE PIE
I used a cookie cutter to make apple cutouts of the pie dough and placed around the edge of the pie. A simple approach with a glorious presentation value.
You could also do a lattice with an extra pie crust for a more classic approach. Or cut out holes on a pie crust and lay it over the top. Feel free to decorate your pie however you feel fit.
Helpful Tips
Don't skip fluting the crust edge. A well-fluted or crimped edge holds the filling in as it bakes and gives the pie a finished, bakery-style look.
Whisk the eggs in fully before folding in the apples and almonds. The eggs are what give this filling its dense, custard-like set, so make sure they're completely combined with the sugar mixture first.
Cover the crust edges with foil if they're browning too fast. Since this pie bakes for a full 50 minutes, tent the crust edge loosely with foil partway through if it's browning faster than the center is setting.
Let the pie cool completely before slicing. The custard-style filling needs time to fully set as it cools — cutting in too soon gives you a runny, loose slice instead of a clean one.
Toast the almonds first for extra flavor. A few minutes in a dry skillet before adding them to the filling brings out a deeper, nuttier flavor that holds up well against the sweet filling.

You can either store your pie on the counter for up to two days, or store in the fridge for 3-4 days. Storing fruit pies on the counter will shorten the lifespan of the pie. If you store covered in the fridge it will add time to your pie.
If you prefer fresh out of the oven warm pie, just pop it in the microwave for a quick reheat or even warm a slice or two up in the oven.

CAN YOU FREEZE ALMOND APPLE PIE
You can freeze this pie, just bake as directed and allow your pie to cool down. Then transfer into a freezer friendly container and store in the freezer for 2-3 months.
When ready to enjoy thaw in the fridge the night before. The warm up in the microwave by the slice, or opt to cover with aluminum foil and warm up in the oven until fully warmed, then serve.

Apple Pie with Almonds
Ingredients
- 1 9- inch refrigerated pie crust or your favorite pie crust recipe, uncooked
- ยพ cup granulated sugar (150g)
- ยผ cup corn starch (30g)
- 3 large eggs
- ยฝ cup unsalted butter melted (113g)
- ยฝ cup dark corn syrup (170g)
- ยผ teaspoon almond extract (1.25 mL)
- 2 cups apples peeled and chopped (240g)
- 1 cup almonds some sliced and some whole (100g)
Instructions
- Preheat oven to 375 degrees F. Spray a 9-inch pie pan with non-stick cooking spray and place the pie crust in the pan, fluting the edge.
- In a medium bowl, whisk together the sugar and cornstarch. Whisk in the melted butter, corn syrup, and almond extract, then whisk in the eggs until fully combined and smooth.
- Fold in the chopped apples and almonds until evenly coated in the filling.
- Pour the filling into the pie crust-lined pan. If desired, top with pie crust cut into decorative shapes, or a second crust cut into strips and arranged in a lattice.
- Bake for 50 minutes, or until the center of the pie is set and no longer jiggles when the pan is gently shaken. If the crust edges are browning too quickly, tent them loosely with foil for the remaining bake time.
- Cool completely on a wire rack before slicing, so the custard-style filling has time to fully set.
